A bold and expressive skin-contact white, this wine is the result of three distinct fermentation styles, each bringing its own personality to the blend. Some grapes were whole-bunch pressed and naturally fermented in neutral French oak barrels, others skin-fermented for deep texture and aroma, and a final portion left to wild ferment—foot-crushed and untamed—for added depth and complexity.
Aged for 9 months in barrel and another 9 months in bottle, the result is golden in colour with a green shimmer, and a nose alive with jasmine, elderflower, caramel, and hints of toffee and tilled earth.
The palate is finely balanced between sweet citrus marmalade, zesty pith, and fresh acidity, supported by elegant tannins and a long, focused finish.
