Poultry, white fish, spicy Asian foodA good example of a winter white. Pale in color, with lanolin and honeysuckle aromas, it has understated older
wood, impressive concentration and weight and a racy, tapering finish. Herbal and refreshing. Hints of nuts from partly oxidative winemaking.
Named after one of winemaker Callan Williams’ favourite musicians, Jim Morrison. The Semillon grapes are picked late and naturally fermented in both Barrel and Stainless Steel Tanks (50/50) before being aged in neutral French Oak Barrels for 12 months.
